Tasty Quickie: Lemon and White Wine Chicken with Sweet Potato Mash

As you may have guessed, I am all about sticking something in the oven for a mid-week dinner, because who wants to be messing around in the kitchen when you could be watching Hollyoaks or catching up with Facebook after a hard day at work?

I also however, think the ready meal should be banished so love simple fresh food that involves pretty much no cooking. This meal then, is perfect for the above reasons.

All the ingredients for the lemony white wine sauce go into a foil parcel with the chicken, so the sauce essentially makes itself and sweet potato mash isn’t too much effort now is it? The added bonus of this dish (apart from it being delicious!) is that it looks rather fancy and like you have put a lot of effort in when it is on the plate, so is also a good one to cook if you have people over for dinner.

Ingredients (serves 2)

2 skinless, boneless chicken breasts,

2 good splashes of white wine (the dregs from that extra bottle of wine that you thought you needed, but couldn’t handle finishing on Saturday will be perfect)

2 medium sweet potatoes peeled and cut into small cubes

1 lemon

2 cloves of garlic (skin on)

2 small knobs of butter/margarine

Black pepper

2 squares of foil big enough to put chicken in and make into a parcel.

Directions

Place each chicken breast on a square of foil and bring up the sides to create an open parcel so that liquid can’t escape.

Put wine, butter, a garlic clove, a squeeze of half a lemon and a sprinkling of black pepper into each foil parcel and scrunch the edges of the foil together to close the parcel.

Place parcels in an oven dish containing about an inch of water (with the close of the parcel facing up so that no liquid can escape, and put in a preheated gas mark 6/200degree oven for 30-35 mins until the chicken is cooked through.

About 15 mins before the chicken is cooked boil the sweet potato for 10 mins, mash and put onto plate.

Remove parcels from oven and place each chicken breast onto potato. Pour over the juices from the parcels and serve with steamed broccoli.

I am totally making this!! But, with butternut squash instead of sweet potatoes. So excited :)

It is sooo good with Butternut Squash, I have made it with that too. I find it is good to throw a potato in with the squash though to give the mash a better consistency.
