We all know that breakfast is the most important meal of the day, but that doesn’t have to entail a soggy piece of toast or a Pop-Tart. These muffins are quick to prepare and packed full of flavor to keep you satisfied all morning!
Breakfast will forever remain my favorite meal of the day and a big bowl of cereal holds particular importance in my daily routine. Every so often, however, I need to shake up the morning with some scrambled eggs and some kind of sweet treat. But so many genuinely good breakfast foods are time consuming to prepare.
These cinnamon-banana crumb muffins are about as simple as baking gets and they remain moist for several days; that is if you can refrain from devouring them within 24 hours! They also make a great addition to the table for brunch with your girlfriends on the weekend.
You’ll Need
{Makes about 10}
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 ripe bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1 ½ teaspoons ground cinnamon
1 tablespoon butter
How To
Preheat oven to 375°F (190° C). Line 10 muffin cups with muffin papers or grease.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture until moist.
Spoon the batter into muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Add in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle over muffins before baking.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
Don’t forget a glass of milk to wash it down!
