When I first came across this unusual Thanksgiving Recipe in Nigella Lawson’s Feast I thought it was just plain weird. However, having tried it last Thanksgiving, I am a complete convert. I don’t care if roasting confectionary is the ultimate excess when it is this tasty, and hey, it’s the holiday season, why not!
After making this dish, I also suddenly understood that scene in Friends where Monica shouts at Rachel for not putting the marshmallows onto the potatoes in circles. I was always pretty foxed by what she was doing but now I know, she was making this dish! Everyday’s a school day at BitchBuzz!
Ingredients (Serves 6)
6 large sweet potatoes
25g butter
Pinch of cinnamon
Half a lime
1 bag of marshmallows
Salt/pepper
Directions
Bring a large pan of water to the boil. Peel and chop the potatoes into small chunks and boil for 10-15 mins until soft.
Drain and return to the pan. Add salt and pepper to taste, butter, cinnamon and a squeeze of lime and mash until smooth.
Spread out in a deep baking dish and top with marshmallows (in concentric circles if you are so inclined).
Bake at 200C/Gas Mark6 for 10-15mins until the marshmallows are golden and crispy.
