There’s only one week left until Thanksgiving so it’s time to get the turkey and game plan thawing. In my family whoever is hosting Thanksgiving makes the Turkey. This is mostly logistics as Turkey takes hours and hours to make. This makes me an expert in one thing, and it’s not Turkey. It is gut busting sides.
Candied yams are a recipe I can get behind. Take something healthy for you a smother it things that are not so healthy for you. Pure genius. It’s also pretty easy as it only takes four ingredients.
Ingredients
Serves 6
Two yams - peeled and cut in large chunks. You can use Sweet Potatoes, but they aren’t as pretty a color. And they aren’t yams… don’t get me started.
¼ cup (58g) Butter
½ cup (100g) Brown Sugar
Marshmallows
Pinch of cinnamon or nutmeg if desired
Method
Preheat oven to 400°F (200°C).
Boil yams in a medium pan for about 15 minutes. Don’t overcook them as they’ll cook a little bit more during they candy-ing process. Drain the yams and melt the butter and brown sugar in the still warm pan. Add the cinnamon and nutmeg if desired at this time.
Place the yams in a medium sized baking dish and pour the butter/sugar mixture over the top. Stir the sugary goodness around all the yams. Now cover that with marshmallows and place in a baking dish.
Bake around 15 to 20 minutes, or until the marshmallows on top are a brownness of your liking. Be sure to keep an eye on them. Mine got a smidgen to brown. Mmmm, extra toasted marshmallow.
The results are a vegetable turned into a simple yet decadent dessert.
