I love Mexican food. I’ve already told you all about my love affair with tacos, but there is a food that I love even more than Tacos. Fajitas.
Fajitas, pronounced Fa-hee-tas for those who aren’t familiar; is a dish featuring steak or chicken mixed with sautéed onions, bell peppers and spices. Traditionally, Spanish rice and refried beans are served on the side along with tortillas of your choice. I love using freshly made corn tortillas.
My first introduction to fajitas was when I went on family vacation in Mexico when I was eleven. Whenever my brother and I were hungry we’d call up room service and order chicken Fa-jy-tas, kinda rhymed with chicken vaginas. As kids we thought it was hysterical; our mother was not impressed. But our order came correctly every time so I’m assuming it wasn’t the first time some gringo mispronounced an order.
After searching for awhile, I finally found an amazing homemade seasoning mix authored by someone known only as *Kathy* on Food.Com. Like Seriously AH-MA-ZING. I will never go out for Mexican food or buy a seasoning packet again.
Ingredients
Seasoning Mix
2 tablespoons mix is equal to one packet of store bought mix.
1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
¾ teaspoon crushed chicken bouillon cubes
½ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
¼ teaspoon cumin
Other Ingredients
Chicken Breast, cut into thin slices. One half breast is enough for two people.
Red and Green Bell Pepper, sliced thin
One half to one whole Onion, sliced
½ cup (125ml) hot water
Optional Sides: Refried Beans, Spanish Rice, Chips and Salsa, Guacamole, and sour cream.
Method
1. Combine all the ingredients for the seasoning in an airtight container. Set aside.
2. In a large skillet, cast iron if you got it, heat 2 tablespoons oil over medium heat. Add chicken, bell peppers, and onions to hot skillet. Cook about 5 minutes or until chicken is almost done.
3. Sprinkle 1 to 2 tablespoons fajita seasoning mix over chicken and veggies then add ½ cup (125ml) hot water.
4. Stir until sauce thickens about 2 minutes.
5. Serve with hot tortillas, refried beans, and rice.
