If I were to credit France for one thing, aside from contributing to the expansion of my waistline and deteriorating my English, it would be the blossoming of my culinary palette. I am guilty of having grown up eating frozen dinners, peanut-butter and jelly sandwiches daily for lunch and thinking of vegetables as something only vegetarian hippies ate. Yes, I was a gastronomical mess.

I actually really hate Makowiec, the traditional, Polish poppy seed swirl cake. I avoid it at all costs come Christmas or Easter time. Yeasty, bready cake plus barely sweet poppy filling? Um. Pass…But my dad loves it and he asked me to do something with the huge tin of poppy seeds he’d been hanging onto for about a billion years. So I reinvented Makowiec and turned it into something we could both enjoy. I nixed the yeast, turned it into a bundt cake, oh, and made it vegan of course.

This is another recipe for those feeling left out of the summer burger tradition. Today’s version is fresh and spicy thanks to the Indian flavors it’s got going on. And using panko breadcrumbs give these patties a delicious crispy, crunchy crust. I’ve paired these babies with a tangy yogurt dip. Vegans can use soy yogurt and non-vegans, feel free to use whichever yogurt you usually buy. Alongside the dip, I served thick slices of cucumber and tomato for a fresh summery lunch.

It seems everyone on the internet is doing lentil salad this week, so why not me? My version is a little Moroccan, a little Asian and a lot delicious. The base of this salad is tat soi, an Asian green that tastes like a spicy spinach or a mustardy bok choy. It works really well with the spicy Moroccan flavors in this salad, but if you can’t find tat soi by you, feel free to use arugula or baby spinach instead.

Thankfully, while my flight-provided orange was confiscated, airport security had no problem letting me back on American soil with a giant jar of questionable liquid in my luggage. You see, golden syrup is really hard to find in the US so I made sure to stock up on that dreamy, liquid gold while I was in London specifically to make these addictive, childish indulgences.
