Last week, I had so little inclination to bother cooking, I nearly had a packet of Batchelors Pasta 'n' Sauce for dinner, and was only prevented from doing so by the fact that I didn't have any milk to make it with. I think you will agree, this is a new culinary low.

I don’t know about you, but many of my close friends are still finding January difficult to deal with this year, despite the fact that the snow has gone and that Blue Monday is technically behind us. Things are meant to be looking up, yet far too many of us are getting stuck in the depressing “mean reds” as a friend calls them, unable to get ourselves excited about the fact that Spring is supposedly just around the corner.

It’s January, the month of new starts and, nine times out of ten, no money. Our employers kindly paid us two weeks early so we could finance the festive overspend however, I always find myself caught very short by mid-January regardless of my budgeting skills. The benefit this that I am forced to be much more creative in my cooking as I re-discover the delights I have in both my cupboards and freezer to help me through the coming weeks.

Winter is a time when we all hit the soup pretty hard. For dinner, I always like something with a bit of bite to it, so French Onion soup, which is not blended, but instead braised to a mushy, soupy consistency whilst keeping the slices of onion whole, is a perfect winter middle-ground. The 'croutons', which are made from sliced, toasted baguette, coated in melted cheese, also help with that.

Everyone has some sort of cold remedy. Some magical ancient concoction passed down from your great-great-granny that's sure to knock the wind right out of a germ’s sails. There was a time I was convinced mighty bass lines amplified at massive decibels would shake loose the phlegm and make everything better. That's some classic teenage thinking for you. I first had this classic baked aubergine dish in a cafe in Italy and it often appears on menus in Italian restaurants here in the UK.
