Now that September has passed, weekends are about three things. Sleeping, eating, and watching X Factor. FACT. While evenings might be reserved for calling whichever take-away you have on speed-dial, long, lazy mornings provide the opportunity for whipping up a selection of delicious breakfast dishes.
A breakfast burrito has just enough stodge to curb Friday night's hangover, and fill you up for most of the day, and while some may wince at eating something so exotic before mid-day, it is really just a slight twist on the traditional really, with chorizo and re-fried beans replacing the far more pedestrian sausage and beans.
Personally, no matter what the time of day, I'm down with a lot of spice, but if you're not, all the chorizo will provide plenty of flavour and punch even if you don't splash on the tabasco.
Ingredients (serves 2)
2 flour tortillas
1 red chili, finely sliced
1 spring onion, finely sliced
4 eggs
1 small chorizo sausage, chopped into chunks
1 small can of refried beans
2 handfuls of grated cheese
tabasco sauce to taste
2 tablespoons of olive oil
Directions
Heat the oil in a pan and fry the chili, spring onion and chorizo for 5 minutes. Whisk the eggs, and pour into the pan with the onion/chorizo mix.
Stir as the eggs cook to scramble and cook for 5-10 minutes according to how runny you like your eggs.
Meanwhile, heat the refried beans according to can instructions.
Spread beans onto each flour tortilla and sprinkle with cheese. Top with the cooked egg mix and as much tabasco as you can handle, roll, and enjoy.
