Bubble and Squeak is one of my absolute favourite British, greasy spoon dishes. You really can’t beat a slice of it with your fry-up. It is traditionally made using leftovers from roast dinner, and if like mine your fridge is a Thanksgiving dinner graveyard then this is the perfect dish to make to use up those leftovers.
Bubble and Squeak can be made using literally anything from a roast dinner: a bit of green bean casserole, some shredded cabbage, or even some Turkey, just smush it all in! The only thing you must always use is mashed potato to bind the patties together.
Ingredients (serves 2)
Two people’s worth of leftover mashed potato
Left over vegetables of your choice such as cabbage, carrots or peas
1 egg
Salt/pepper
Oil for frying
Directions
Whisk egg and combine all ingredients together in a bowl.
Take out tennis ball sized chunks and flatten into patties until all the mixture is used up.
Heat oil in a non-stick frying pan and fry patties on both side for 3-4 minutes each until golden brown.
Serve with some roast meat, with a fried egg, some bacon and beans as part of a hearty fry-up, or even just on their own with gravy.
