First of all I must say that this is not a low fat dinner. There’s really no pretending that Chorizo and Cheese are not 90% fat or something, but then all the good things seem to be! However, nothing is bad in moderation, and this easy-to-throw-together chicken dish is a perfect mid-week culinary treat. Eat loads of fish and vegetables (yes, just like VB) for the rest of the week and it won’t matter anyway.
Cooking the chicken in passata with big chunks of chorizo keeps the meat nice and moist and infuses the chicken with the lovely, spicy, garlicky flavour of the sausage. The oozy melty cheese, added at the end is the icing on the cake, so to speak. Sold?
Ingredients (serves 2)
2 skinless, boneless chicken breasts
150g chorizo sausage (the proper sausage kind you get in a deli, not the thin sliced kind from a packet), chopped into small chunks
1 carton of passata
150g cheddar cheese, grated
Salt/pepper
Directions
Place a smallish roasting tin on the hob and fry chorizo with no oil for 3-5 mins to render out some of the fat. Add chicken breasts to tin and quickly allow to colour slightly on each side.
Turn off the heat and pour over carton of pasatta. Cover tin with foil and place in the oven at 200C/Gas Mark 5 for 25mins.
Remove from the oven and take foil off tin. Top with cheese and return to the oven for a further 10mins.
Serve with green salad and baked potato wedges.
