Growing up, we ate some pretty recession friendly foods.
From hotdogs covered in Velveeta cheese and smothered in baked beans, to “pizza” consisting of a slice of white bread, mayo, ketchup and a Kraft single – I’m not afraid of White Trash Cooking.
One of my favorite dishes is called Frito Pie - a delightful little meal that can be prepared, cooked and consumed in 20 minutes flat. (25 considering how fast you can chew.)
Our readers in the UK can make this meal, but you’ll have to have a bag of Chili Cheese Fritos sent out to you, as there is no English substitute, and as it’s the main ingredient of the meal, it’s kind of important.

Ingredients
Half of one red onion
1 bag of Chili Cheese Fritos
2 cans of Chili (Hormel No Beans is my favorite...less beans, less gas)
A shit ton of grated cheese (Kraft’s shredded Mexican Cheese bag is perfect)
1 container of sour cream
Directions
Add 1/3 of the Fritos bag into a medium sized Pyrex or microwave safe bowl. (If you're in Florida or on the East Coast they tend to sell Fritos in the canister things pictured above. One canister is the same as one bag, as far as measurements go!)
Crush the Fritos up a bit, but not too much as you don’t want them into a powder – just crushed up enough so that they lay flatter in the bowl.
Next, add one can of the chili, and then cover the chilli with a thick layer of the grated cheese.
On a plate, crush up another 1/3 portion of the Fritos and then add them on top of the cheese. Add the other can of chili, and then add the chopped up red onions in a layer on top of the chili.
Next, add one more thick layer of grated cheese, and crush up the remaining Fritos as the final layer.

Put into microwave, uncovered, for 10 minutes, and then add a top layer of cheese.
Put back into microwave for an additional minute, and then you’re all set! I personally add a dollop of sour cream to my Frito Pie before eating it, but that’s totally up to you!
