Tasty Quickie: Spinach & Parmesan Crusted Salmon

On this week's Celebrity Come Dine With Me, that man what used to be on Catchphrase, Roy Walker, created a rather interesting looking cheese crusted fish dish.

His fellow celebs claimed it was delicious, and while I personally thought it looked like fish spread with Primula, the basic principle sparked off a light-bulb in my little old brain box. 

By adding spinach to the mix, the topping becomes almost pesto-like, making it not only more flavoursome, but lighter. Breadcrumbs and cheese remain, allowing for a crispy and gooey topping, while using parmesan as well as cheddar creates an extra cheesy taste.

Best of all, you simply have to shove it all in a blender, slather on the fish and bake, making this a very quick and easy dish that is also impressive and deliciious.

Serve with crispy potato wedges and green vegetables.

Ingredients (serves 2)

2 salmon fillets

2 large handfuls of spinach

200g grated cheddar

100g grated parmesan

2 handfuls of breadcrumbs (or 1 large slice of roughly torn bread, since it is going in the blender)

2 tablespoons of olive oil

salt/pepper

Directions

Throw all the ingredients except the fish into a blender and blend to a gluey paste. If it comes out too crumbly, add a little olive oil.

Oil a baking tray well and place the salmon fillets skin-side down. Season and press the topping onto each fillet to create a crust.

Bake at 200C/Gas Mark 5 for 15-20mins until the crust is golden.
