Muffins make me so happy.
With a muffin, you get to walk around like you've got your life together. You're one of those healthy people that maybe bikes to work and always has extra safety pins in her bag in case a hem goes rogue. You whip out that muffin from your immaculately organized bag to fuel you through your morning meeting where you'll use your very large brain to impress many people. You're very important.
But you see, muffins are really just basically cupcakes. Cupcakes that make you seem responsible. Muffins are amazing.
Ingredients
Makes 12 to 14 medium sized muffins
1 1/2 cup all purpose or spelt flour
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/2 cup light brown sugar
3 bananas, mashed
2 tablespoons ground flax seed combined with 4 tablespoons water
1/4 cup olive or canola oil
1 teaspoon vanilla extract
1 cup frozen blueberries
Method
Preheat oven to 350 degrees Fahrenheit. Line cupcake/muffin tins with paper wrappers.
Stir together flour, baking powder and soda, salt and cinnamon in a bowl and set aside.
In a large bowl, whisk together sugar, bananas, flax mixture, oil and vanilla until emulsified.
Mix dry ingredients into wet, stirring until just combined. Toss in blueberries and mix to incorporate.
Fill tins three-quarters of the way full and bake for 22 to 25 minutes. Do the toothpick test to be sure they're fully baked. Turn out onto a wire rack and let cool.
Serve warm or completely cool and trick everyone into think you've really got it together.
