I apologize for still being on a breakfast kick. But I also don't apologize, because these waffles are delicious. This is just a basic recipe, but you can jazz it up any way you like. For instance, as you can see in my picture there, I added sliced banana and dark agave nectar (which tastes a lot like maple syrup thankfully, as I was out of maple syrup).
Ingredients
makes about 6 waffles, depending on the size of your waffle iron
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons white or brown sugar
1 pinch salt
2 1/4 cups almond or soy milk
2 tablespoons olive oil
1 teaspoon vanilla extract
1 teaspoon almond extract
Method
Turn on your waffle iron and preheat.
Sift together all the dry ingredients. Whisk in the wet ingredients, being careful not to over-mix.
Following your waffle iron's instructions (grease griddle first, if necessary), pour enough batter onto your waffle griddle and cook until light golden brown.
Serve with an array of fruits, syrups and/or powdered sugar.
