Blondies are my favorite. In my opinion they are majorly underrepresented. Everyone goes crazy for their cousin the brownie, but I think blondies are where it's at.
Blondies are rich, vanilla scented pieces of heaven that happen to share a name with my favorite band. What do brownies have going for them? Ugly uniforms. No thanks.
Ingredients
1/2 cup of melted coconut oil or melted non-dairy butter
2/3 cup packed dark brown sugar
1/3 cup granulated sugar
1 egg-replacer egg, prepared or 3 tablespoons applesauce
1 tablespoon vanilla extract
1 tablespoon almond extract
1 cup of all-purpose flour
1 teaspoon baking powder
1/4 teaspoon of baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
Method
Preheat the oven to 350°F. Grease 8x8- or 9x9-inch glass baking dish.
Whisk oil/butter, sugars and extracts until everything is combined and emulsified a bit.
Sift in flour, baking soda and powder and salt. Stir to just combine. Fold in chocolate chips.
Bake for 25 to 35 minutes or until an inserted toothpick comes out clean.
Store covered for up to one week, or wrap in saran wrap, then in foil and freeze for up to one month.
