Vegan Nibbles: Chocolate Pudding

There is something spectacularly old fashioned and homey about a big bowl of pudding. Give me some pudding with whipped cream and I'm instantly transported back to the imaginary 1950s Americana diner -eating upbringing I did not have (see picture). 

Ingredients

2 cups almond milk

4 tablespoons corn starch or arrowroot powder

5 tablespoons granulated sugar

3 tablespoons cocoa powder

1/2 cup semi-sweet chocolate chips

1 tablespoon vanilla extract

Method

Bring all ingredients almost to a boil in a large saucepan while whisking constantly. 

When the mixture is just about to boil, lower heat to a very gentle simmer and continue whisking for 10 minutes. The pudding will become thicker and thicker.

Turn off the heat and set aside to cool. 

Once somewhat cool, transfer to the refrigerator and cool completely before serving. Serve with berries if you like and a mountain of Rice Whip if you know what's good for you.
