Vegan Nibbles: Easy Tomato Sauce

It's good to have a quick and tasty tomato sauce in your recipe arsenal. 

With a good tomato sauce, a box of pasta becomes a meal. Frozen ravioli become a fancy supper. A ball of store bought pizza dough becomes your world renown famous pizza. 

You get the picture!

Ingredients

3 tablespoons olive oil

3 cloves garlic, minced

28-ounce can chopped tomatoes

Leaves from 4 sprigs of fresh thyme

1/4 cup fresh oregano leaves

1/2 teaspoon salt

the tiniest pinch of sugar (just a few grains!)

fresh ground black pepper to taste

1/4 shredded fresh basil leaves

1 tablespoon lemon juice

Method

In a medium sized stock pot, heat olive oil and sizzle garlic for one minute. Add tomatoes, thyme, oregano, salt and sugar. Bring to a boil. Lower heat and simmer uncovered for 10 minutes. Turn off heat and stir in black pepper, basil leaves and lemon juice. Taste and adjust spices. Serve any way you choose! (There are ravioli peeking out in my picture up there!)
