Unfortunately you can’t just buy one pita. You have to buy a whole bag and either commit to eating them at every meal before they go stale, or find an inventive way to use them all up.
Enter: pita chips! While readily available in your grocery store, if you make them at home you can control the amount of oil and salt. Plus these are baked, not fried.
This recipe yields a flavorful Middle Eastern chip that would go great with hummus or baba ghanoush. But feel free to try any sort of flavor combination you like. You could even use cinnamon and brown sugar for a sweet treat!
Ingredients
4 tablespoons olive oil
1 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon garlic powder
1 pinch black pepper
1/2 teaspoon salt
8 pitas
Method
Preheat oven to 375 degrees Fahrenheit/ gas mark 5.
Slice each pita in half, then in half again. Repeat until you have eight wedges from each pita.
In a bowl, whisk together spices and oil. Throw in the pita wedges and toss to coat well.
Lay out pieces in one layer on a cookie sheet (you may need two cookie sheets depending on the size).
Bake for 15 minutes, or until the chips are golden brown and crispy.
Store in an airtight container for up to one week.
