Vegan Nibbles: Power Packed Granola

I was shocked to discover that I’ve been averaging two to three packets of granola bars (that’s four to six actual bars!) each day. I figured granola would be an easy, healthy snack to have at my work desk. And while it is easy, it’s certainly not healthy. My all-natural, organic bars might have flax seeds, but they also have cane sugar as their second ingredient and they’re packed with added, unnecessary oil.

So what’s a girl to do? Make her own granola of course. This recipe is packed with good fats from almonds and pumpkin seeds and is sweetened naturally with your choice of honey, agave or maple syrup. While many vegans (even possibly the majority, I’m not really sure) don’t eat honey, some do so I’ve listed it here. It’s a personal choice and I certainly don’t judge, but if you’re making this for a vegan friend it’s best to ask what their honey policy is.

Ingredients

3 cups rolled oats

1 apple, cored and diced

2/3 cup pumpkin seeds

½ cup almonds, roughly chopped

½ cup honey, agave or maple syrup

1 tablespoon ground cinnamon

2 teaspoons pumpkin pie spice

4 tablespoons juice (I used peach juice)

1 teaspoon lemon juice

Method

Preheat oven to 350 degrees Fahrenheit. Lightly grease a cookie sheet with olive oil.

In a big bowl stir together oats, apple, pumpkin seeds and almonds.

In a separate bowl whisk together liquid sweetener, spices and juices until well combined.

Pour liquid over oat mixture and stir well to combine.

Spread out onto the cookie sheet in one even layer.

Toss into the oven for 20 minutes.

Store in an airtight container for up to two or three weeks.

Serve over some yogurt or milk or just pop into your mouth by the handful.

Lovely recipe, but unfortunately honey isn't vegan. Although, as you mentioned, agave nectar is really nice and quite strong if you like it sweet, or maple syrup is rich, warm and gorgeous too!

Hi Beth! I listed honey as an option because my vegan friends are split down the middle on the topic. Some eat it, and some don't, so I figured I'd put it up there as a possibility!

Hi, I do totally understand, and it does seem like it's being really picky - I'm really aware of that!

Although really, honey is not vegan, in exactly the same way that cheese, eggs or milk isn't vegan either; it's produced by animals. Often people are confused, especially when just starting to explore a vegan diet, so I always think it's best to stick to the 'definitely vegan' options. Also, you could have that recipe as just a recipe for granola, and add a note that you can make this vegan if you don't use the honey.

Maybe it would have been better to add that into the notes as a 'non-vegan option', but having it in the main ingredients might mean that somebody would prepare this as a vegan meal for a vegan, not realising that they really wouldn't want to be eating honey. I totally know you did state that though, but think clarity is a good thing - especially when you're most probably teaching a lot of people what vegan food is.

Like I say, it might seem like being picky, and I hope it doesn't come across that I'm just being picky for the sake of it! I have to admit that when I first realised honey wasn't vegan, I had a serious d'oh moment. It doesn't seem to be the same as dairy at all, but of course it is.

As I say, I really hope this comes across not as a rant, but just as some friendly feedback.
