I’m not exactly ready to let Valentine’s Day go. And really, the spirit of Valentine’s Day should live on year round, don’t you think? We should be telling those we love that we love them every day. We should be doing nice things for them every day. We should be making truffles for them (and ourselves) every day. Right?
Ingredients
makes about 24 quarter-sized truffles
8 pitted medjool dates
¼ cup agave nectar
¾ cup raw almonds
¼ cup raw cacao powder (you can use cocoa powder instead, which isn’t raw but much easier to find in shops), plus extra for dusting
1 pinch coarse salt
Method
First blitz almonds in a food processor until they turn into little coarse sandy bits. Remove from processor and set aside.
Then blitz the dates and agave nectar until you get a sticky paste. Then add in the cacao powder and blitz until you get a thick paste. You’re really going to be giving your processor a work out, so if you’re worried about the strength of your motor, you can always mix in the cacao powder by hand.
Then, plop the date paste into a bowl, add in almond pieces and a pinch of salt. Squish together with your hands until the almonds are evenly distributed throughout the mixture.
Pull off tablespoon sized pieces and roll into balls. Place a few tablespoons of cacao powder in a bowl. Roll each ball in the cacao powder and place in a fancy, or not so fancy box for storage. Continue until all the truffle mixture has become cute little truffle balls.
