It is cold and stormy out and I'm a little sad that Christmas is over. So, there's nothing better than tucking into a big bowl of rice pudding to eat my feelings away... Right?
Ingredients
1 cup long grain white rice
5 cups vanilla almond milk
1/2 cup brown sugar
2 teaspoons spice of your choice - cinnamon, cardamon, ginger, etc.
1 cup mixed add ins of your choice - raisins, slivered almonds, walnuts, lemon or orange zest, etc.
1 teaspoon vanilla extract
1 tablespoon rum or amaretto (optional)
Method
Dump rice and milk in a large saucepan.
Bring to a boil. Once boiling, lower heat and simmer for 20 to 30 minutes, or until rice is tender.
Add in sugar, spices, mixed add ins, vanilla and booze if using. Stir and continue cooking for another 10 minutes.
Serve warm with some chocolate shavings or refrigerate for a few hours and serve cold with some rice whip.
