I am a reasonable human being. I know the holidays can lead to overindulgence. But I'm not one of those lame-os out there telling you to "take it easy at the holiday party" and "really think about how many cookies you're eating." No sir, I will not ask you to think how many cookies you're eating.
I will however tell you to make this lower fat guacamole so that you can eat even MORE cookies if you so choose.
Good day.
Ingredients
1 medium sized avocado
1 cup frozen peas or edamame beans, cooked according to the instructions on the packet
2 cloves garlic, finely minced
1/2 small red onion, diced
1 large tomato, diced
2-3 tablespoons lemon juice
1 teaspoon ground cumin
3-4 tablespoons cilantro, minced
Salt to taste
1/8 teaspoon cayenne pepper (optional)
Method
Mash together the avocado and peas/beans with the back of a fork or wooden spoon. Add all other ingredients and whip together. Add the extra tablespoons of lemon juice and cilantro if you like. Add salt to taste and cayenne if feeling adventurous. Refrigerate for about 15 minutes, then chow down and think about what's for dessert.
