Some of you must be lucky enough to have gardens overflowing with tomatoes right now. If you do, I am jealous. If you don't, pick up some beautiful tomatoes from your local farmers' market (like I did!) and make this tangy, slightly spicy salsa. Then sit back and enjoy these last throes of summer.
Ingredients
3 medium sized heirloom tomatoes, cut into small chunks
1/2 cup grape tomatoes, sliced in half
1/2 medium sized red onion, finely diced
1 pinch kosher salt
1 jalapeño pepper, de-seeded and finely chopped
2 scallions, finely chopped
1 teaspoon red wine vinegar
1 tablespoon lemon juice
1 handful cilantro, finely chopped
Method
Toss all ingredients into a bowl and toss to combine. Cover and refrigerate for one hour to let the flavors marry.
Serve with chips and crudites or on tacos and sandwiches.
